Chicken Lettuce Wraps, Fried Rice, Tapioca Dessert

Enjoy a fresh and delicious meal on the lighter side. This week we are featuring favorite recipes by Chef Pieter's amazing wife, Susan Sypesteyn. Celebrate Cambodian New year with an extra special feature: Banana Tapioca Pudding.




Special Notes: We Recommend that you prepare this Catfish Curry Dish first, along with the steamed Jasmine Rice and Chinese Long Beans. The Jasmine Rice recipe makes enough rice for BOTH meals. When steamed rice is finished cooking, reserve half of it in refrigerator until ready to prepare the Fried Rice. Fried Rice comes out best when using cold, left-over rice.



Chicken Lettuce Wraps

4 Servings


What You Will Need:


  • 1 ½ lb ground chicken

  • 2 Tbl Oil

  • 2 Garlic Cloves, finely chopped

  • ½ Red Onion, Cut in Half and Thinly Sliced or Finely Chopped (same size as garlic)

  • 1/4 tspn Salt

  • 1/4 tspn Pepper

  • ½ tsp Paprika

  • ½ tsp ground coriander

  • 2 Tbl fish sauce

  • 1 Tbl light soy sauce

  • 1 Tbl sugar

  • 1 Lime, juiced (about 1 ½ Tbl)

  • 2 Kaffir lime leaves, ribs removed, and super thinly sliced (optional)

  • ½ tsp red chili pepper flakes

  • 1 ½ Tbl toasted rice powder

  • 2-3 Green Onions, thinly sliced

  • 3-4 Tbl Cilantro, chopped

  • Lettuce Leaves

Procedure:


1. Pour 2 Tbl oil in saute and heat on medium to medium-high heat.


2. Put chopped garlic and onion. Cook garlic and onion until tender.  


3. Turn up skillet to high heat.


4. Add ground chicken to skillet.


5. Season with salt, black pepper, paprika and coriander.


6. Cook for about 2-3 minutes.


7. Then add fish sauce, soy sauce, sugar, lime juice, kaffir lime leaves, and red chili pepper flakes.



8. Continue cooking, stirring frequently, breaking up chicken until cooked through; about 5-6 minutes.


9. Turn off heat and add cilantro, green onions, and toasted rice powder.



10. Taste and adjust seasoning as needed (like salt, pepper, or lime juice).


11. Serve in lettuce leaves.




*Tip—add crushed peanuts if you like. We do!

Fried Rice

4 Servings


What You Will Need:


  • 4 cups, day old cooked jasmine rice

  • 2 Tbs. of Oil

  • 2 Cloves of Garlic, Finely Chopped

  • ½ tsp coriander

  • 1 tsp sugar

  • 2 oz light soy sauce

  • Pinch of salt and pepper (about 1/8th tspn)

  • 1 cup of Peas

  • 1 Tbs Cilantro, rough chop

Procedure:


1. Heat oil in skillet with chopped garlic over medium-high heat with coriander and sugar. Saute until garlic is light golden color.


2. Turn heat up to high.


3. Add rice.


4. Add soy sauce. Stir until well incorporated.



5. Add peas.


6. Season with Salt and Black Pepper.


7. Mix until heated through.



1. Adjust seasoning for salt and pepper if needed.


2. Garnish with chopped cilantro.


*Tip—I like to use thin or light soy sauce. I like my rice to be toasted and let sit in the pan so the bottom of rice can form a little crust. Add scrambled egg for extra goodness!


Banana Tapioca Pudding

4 Servings


What You Will Need:


  • 2 cups of water

  • 1/2 cup of sugar (less, if the bananas are very ripe)

  • 1 (14-ounce) can coconut milk

  • 1/4 cup minute tapioca pearls***

  • 2 large ripe bananas, cut into 1/2 inch pieces

  • 1/2 teaspoon salt

  • 1-2 teaspoons sesame seeds, toasted (optional)

Procedure:


1. Bring water and coconut milk to a boil in a medium saucepan.

2. Add sugar, salt, tapioca.



3. Reduce heat to medium-low, let it cook for about 30 minutes, stirring frequently. Stir in bananas, remove from heat and let stand for 15 minutes.



4. After adding the bananas, don't stir too much, as it will break up the fruit.

5. Serve hot, or chill for 3 to 4 hours.





**If unable to find minute tapioca pearls, you may use packaged tapioca pearls but you will soak it overnight prior to making recipe.
